coconut milk

coconut oil

crushed red peppers

Instructions
Peel the potatoes and chop them into cubes. Always keep the potatoes immersed in water.
Rinse them twice and soak them in water for 30 minutes or more.
Again rinse them and transfer to the boiling water.
Allow them to cook till soft. Drain them.
Once drained well mash them with a masher or fork.
In a sauce pan, warm coconut milk, coconut oil, crushed red peppers, pepper, and salt to taste and stir them well.
Once the oil melts, transfer to the mashed potato and stir them well.
Use a fork to beat them well or use immersion blender to get a creamy potatoes.
Transfer to the serving bowl and garnish with crushed red peppers, pepper, and green onions.
Notes
Rinse the potato well by changing the water.
For a creamier version, add coconut cream.
