Instructions
Dry roast the chilies, removing the stalks without burning.
Soak them in hot water for 10 minutes.
In a blender or processor, add soaked chilies by draining, garlic, salt, lemon juice, and sugar and grind them with water to a fine paste.
On the heated pan, add oil and the chili ground paste and cook till all the water are removed. Cover and cook to avoid splutter.
Switch off the flame and transfer to the sterlized jar and add balsamic vinegar - mix.
Chipotle sauce
Combine the chipotle paste, sour cream, salt and lemon juice and use as a topping for any type of food.
Notes
Always wear gloves while working with chilies. If not, do not touch in bare hands. Use fork or spoon to handle chilies.
