In a blender, combine oat flour, grated carrot, baking powder, baking soda, salt, milk, oil, agave nectar, and vanilla extract and pulse for few seconds until combine or whisk all together in a bowl.
Let the batter sit for 5 minutes without disturbing.
Heat a griddle or skillet over medium. Brush with oil.
For each pancake, drop 1/4 cup of batter. Cook pancakes, three at a time, until small bubbles form and pop on top.
Flip, and cook 1 to 2 minutes more until golden on each side. Serve warm with any desired toppings.
