Carrot Oatmeal Pancake is the perfect breakfast to prepare on busy mornings. The vibrant color of the carrots in spring, (though available in all seasons) makes it special to start the season. Mostly the carrot cakes are baked every spring for Easter. This pancake is similar to the cake, like a dessert with a soft texture. Preparing with oatmeal makes it more healthy. Believe me or not, it tasted so perfect, like regular flour. The dough was sticky, but once cooked, it was not oaty.

Ingredients
  

  • 1 cup oatflour
  • 1 cup grated carrot
  • 1 cup milk Nut milk or dairy
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1 tbsp oil
  • 1 tbsp agave nectar or maple syrup or sugar
  • 1/4 tsp vanilla extract

Instructions
 

  • In a blender, combine oat flour, grated carrot, baking powder, baking soda, salt, milk, oil, agave nectar, and vanilla extract and pulse for few seconds until combine or whisk all together in a bowl.
  • Let the batter sit for 5 minutes without disturbing.
  • Heat a griddle or skillet over medium. Brush with oil.
  • For each pancake, drop 1/4 cup of batter. Cook pancakes, three at a time, until small bubbles form and pop on top.
  • Flip, and cook 1 to 2 minutes more until golden on each side. Serve warm with any desired toppings.
