In the Instant pot, add the soaked and drained rice, coconut milk, water, and coconut sugar and set in pressure cook mode HIGH for 20 minutes.
For a more creamy consistency, set again to porridge mode HIGH mode for 20 minutes.
Caramelizing bananas
Chop bananas into any desired shape. On a hot pan spread some coconut oil and lay the bananas and top with them coconut sugar. Turn and drizzle some sugar on top. Once the sugar are caramelized remove them.
Serve rice pudding with caramelized bananas, coconut flakes, and some nuts.
