Ingredients

Mixed color peppers
cubed

Carrot
cubed
1/4

Beans
chopped
1/4
cup
brussel sprouts

cup
Cucumbers
chopped

Pineapple
cubed
1/2
cup
Apple
peeled and chopped
For dressing
1/2
cup
Greek yogurt
2
tsp
Mustard sauce or powder
1
tsp
mixed herbs
2
tsp
Olive oil
pepper and salt
to taste
Instructions
In a saucepan boil a cup of water in a medium flame, add color peppers and boil for five minutes.
Remove them in a strainer and save the water to boil other vegetables
With the saved water boil beans, after it is halfway cooked add carrots and boil for 5 minutes.
Add brussel sprouts and cook till tender. Remove them all in strainer and let it cool down.
For dressing
In a bowl add greek yogurt, mixed herbs, olive oil, mustard sauce, pepper, salt and whisk till frothy using a hand blender or whisk.
For salad
Toss cucumber, pineapple, apple and boiled vegetables with the yogurt dressing and serve immediately.
Notes
Let the cooked vegetable cool completely before mixing in a salad.
Add or less the ingredients as per your choice.
