Falafel

Tzatziki sauce

English cucumbers
grated

dill leves
chopped

cashew nut paste
1/2

olive oil

lemon juice
salt and pepper
to taste
Instructions
Falafel
Soak 1.5 cups of chickpeas in plenty of water overnight. After soaking, rinse, and drain.
In a processor, add chickpeas, onion, garlic, parsley, cayenne, coriander seeds or powder, salt, and pepper to taste.
Pulse all the ingredients coarsely. Remove any bigger chickpeas and discard it.
Add the oat flour or garbanzo flour and mix well. Refrigerate them for 1-2 hours.
Add 1/2 tsp baking powder and 1/4 tsp of baking soda and mix well.
Use a scoop or 2 tablespoon to take the dough and form a small ball out of it. Fill a saucepan with any neutral oil of 2-inch depth.
During the high smoke point, drop 6-7 falafel balls slowly in the oil and fry on both sides until golden brown.
Remove from the oil and drain them in the paper towel. Continue for all the falafel balls.
Tzatiki sauce
Grate the cucumber and remove the juice. Add chopped dill, olive oil, pepper, and salt to taste. Refrigerate until use.
Add cashew paste and lemon juice and serve immediately.
Notes
If using a thermometer, the ideal temperature will be around 350
°F - 375°F.
Whole coriander seeds give more flavor if you don't have use grounder coriander powder.
I like to add my leavening agent (baking powder and soda) before frying. In the video, I have included the processor itself.
