Ingredients
  

Chipotle paste

  • 15 chipotle chilies
  • 3 chile de arbol optional
  • 3 cloves garlic
  • 1 tsp sugar
  • 1 tbsp lemon juice
  • salt to taste
  • 1/4 cup water or 1/2 cup
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar

Chipotle sauce

  • 1 tbsp chipotle paste
  • 1/4 cup sour cream
  • 1 tsp lemon juice
  • salt to taste

Instructions
 

  • Dry roast the chilies, removing the stalks without burning.
  • Soak them in hot water for 10 minutes.
  • In a blender or processor, add soaked chilies by draining, garlic, salt, lemon juice, and sugar and grind them with water to a fine paste.
  • On the heated pan, add oil and the chili ground paste and cook till all the water are removed. Cover and cook to avoid splutter.
  • Switch off the flame and transfer to the sterlized jar and add balsamic vinegar – mix.

Chipotle sauce

  • Combine the chipotle paste, sour cream, salt and lemon juice and use as a topping for any type of food.
