amaranth flour

baking powder

coconut sugar

flax meal

warm water

coconut milk

vanilla extract
Instructions
In a bowl, combine flax meal and water and keep aside for 5 minutes.
In another bowl, sieve amaranth flour, baking powder. Add coconut sugar and keep aside.
Mix coconut milk, vanill extract in the flax meal.
Add the wet ingredients to the dry and mix gently. Allow it to resr for 5 minutes.
Heat an iron griddle and brush with coconut oil. Pour 1/4 cup of batter and allow it to cook for 2 minutes and flip and cook again.
Repeat for the remaining batter.
Serve with
Raspberry chia jam
and fresh fruits.
