Amaranth Pancakes

Amaranth pancakes are naturally gluten-free and are rich in protein and loaded with anti-oxidants. The pancakes will not be fluffy as compared to the regular pancakes or the oatmeal pancakes. Since they do not have gluten-free, it does not hold the shape perfectly. The carrot oatmeal pancake was colorful and fluffy. We are using ground flaxseed for the fluffy and soft pancakes.

Serve the pancakes with maple syrup and fresh fruits with Raspberry chia jam on top. There was no sugar in pancakes other than the toppings. If You want pancakes to be sweet add 3 tbsp of coconut sugar.

Amaranth flour:  It is a highly nutritious grain with high protein and is naturally gluten-free. While it has some similarities to quinoa it has its own benefits.
Flaxmeal: a good source of many nutrients. Their health benefits are mainly due to their content of omega-3 fats, lignans, and fiber.

Steps for preparing Amaranth Pancakes

  1. Soak flax meal in warm water.
  2. Combine amaranth flour, baking powder, and coconut sugar.
  3. Add plant-based milk to the soaked flax meal with vanilla extract.
  4. Combine the dry ingredients with wet ingredients.
  5. On a heated griddle pour 1/4 cup of batter and make pancakes.

Variations

Milk: I used coconut milk, you can use any type of plant-based milk here.
Flax meal: If you do not have a flax meal, grind the whole flax seeds in a powerful blender to make a fine powder.
Fresh fruits: serve with fresh fruits or any preserve on top.

It is so easy to prepare, so I suggest keeping the dry ingredients and wet ingredients ready in a separate container. When ready, mix and cook the pancakes. The pancakes stay in the refrigerator well for 2-3 days, I have not kept them frozen.

Ingredients
  

  • 3/4 cup amaranth flour
  • 1 tsp baking powder
  • 1 tbsp coconut sugar
  • 1 tbsp flax meal
  • 1/4 cup warm water
  • 3/4 cup coconut milk
  • 1 tsp vanilla extract

Instructions
 

  • In a bowl, combine flax meal and water and keep aside for 5 minutes.
  • In another bowl, sieve amaranth flour, baking powder. Add coconut sugar and keep aside.
  • Mix coconut milk, vanill extract in the flax meal.
  • Add the wet ingredients to the dry and mix gently. Allow it to resr for 5 minutes.
  • Heat an iron griddle and brush with coconut oil. Pour 1/4 cup of batter and allow it to cook for 2 minutes and flip and cook again.
  • Repeat for the remaining batter.
  • Serve with Raspberry chia jam and fresh fruits.
