On boiling water, add sprout and allow it to cook for 1 minute. Drain immediately. Keep aside.
To prepare the filling, heat the oil in a pan. Add onions and saute until the onions are soft.
Next add colored bell peppers, grated carrot, and sprouts and cook for 5 minutes in a medium flame.
At this stage, add seasoning blend, hot sauce, salt, and mix well.
Transfer to a bowl and add vegan mayo and stir well. Keep aside.
To assemble the sandwich, place one slice of bread and keep half of the avocado and press ir with the fork. Add few drops of lemon juice on top(optional)
On another slice of bread, spoon the filling generously. Add lettuce if you like. Cover the filling with avocado pressed slice.
Press the bread gently using your hand. Serve immediately with any sauce.
Notes
Use soft kind of bread, since we are not pressing in a sandwich maker.
Roast the bread prior to arranging the vegetables.
