Questions/Tips

What type of sesame seeds should I use?

Hulled sesame seeds work better. The brown and black sesame seeds do not yield creamy tahini and taste bitter compared to the hulled sesame seeds.

What oil should I use for preparing tahini?

Use a quality oil. The oil should be neutral with no flavor. Do not use extra virgin olive oil or sesame oil. These oil dominate the taste of tahini. Sesame oil has a strong flavor so do not combine sesame oil.

Can I use a blender to prepare tahini?

Normal blenders will not work only high-speed blenders or food processors will give smooth creamy tahini. First, grind the sesame seeds to powder then gradually add oil.

Should I use more oil for preparing tahini?

No, since sesame seeds are nutty they give oil while grinding. For a cup of sesame seeds, only 2-3 tbsp oil is needed.

Do I need to roast sesame seeds?

Yes. Once sesame seeds are roasted they tend to produce oil like all other nuts while grinding the oil comes out. Make sure you do not over roast the seeds and they do not change the color.

Why is my tahini dry?

If you store it in the refrigerator for a long time without covering it properly it may get dry. So, make sure you store it in an airtight container and stir well after taking it out.
