Chia seed cookies

Chia seed cookies are so simple to prepare with fewer ingredients. It is just a combination of whole wheat flour, sugar, and oil. I would not say this cookie is healthy. However, this recipe can be prepared with whole wheat without baking powder or soda. I used dark brown sugar and whole wheat, which turned my cookie brown. The cookie will be light in color if you use white sugar.

Fresh rosemary or dried herbs with olive oil would make an excellent combination in the cookie. If adding herbs, add more salt and avoid vanilla extract.

Can I use a different flour for the cookies?

Yes, you can use all-purpose flour or a combination of whole wheat flour and all-purpose flour. I have not tried gluten-free flour.

What are the other flavors I can include in the cookies?

You can add dried herbs like rosemary or seeds like cumin and sesame.

Can I increase the sugar in the cookie?

No. If you increase the sugar level in the cookies, the dough becomes loose and cannot shape them. If you are trying to increase the sugar, reduce the oil.

Should I use brown sugar?

You can use any sugar. Brown sugar made the cookies too brown. You can use white sugar to get a nice light brown cookie.

Can I reduce the oil?

I have not tried reducing the oil. However, we can reduce it to 1/4 cup and check how the cookie turns.

  • 1.5 cups Whole wheat flour
  • 1/4+1/8 cups Brown sugar
  • 3/4 cup oil
  • 1 tbsp chia seeds
  • 1/3 tsp salt
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350 °F
  • In a bowl combine oil and sugar and mix well until the sugar dissolves in oil.
  • Add chia seeds, salt, and vanilla extract.
  • gradually add whole wheat flour and form a dough.
  • Shape them into cookies.
  • Bake for 15 minutes. Once the cookies are cool store in an airtight container.

You can add white sugar. If adding white sugar, powder them and add it.
