Glass noodles

The glass noodles are vegan and gluten-free, they are made with mung bean vermicelli. Easy to prepare with no major cooking. I prepared a sauce, added vegetables for a tasty meal. To make it a wholesome meal you can add a protein like tofu, edamame beans. You get two varieties of glass noodles made from mung bean or sweet potato. The best option to try for gluten-free noodles is Glass noodles.

Make sure you don’t soak the noodles too long. If soaked for a long time, it absorbs a lot of sauce. Make sure you prepare this and serve immediately. If it’s left in the refrigerator or outside for long period the noodles become too dry. If it is too dry add one more tbsp of peanut butter and 1/4 cup of water and heat it.

Steps for preparing glass noodles

  1. Prepare peanut sauce by combining peanut butter, miso paste, tamari sauce(soy sauce), sriracha, hot sauce, chili flakes, agave nectar, warm water, and salt. Mix well and keep aside.
  2. Soak the glass noodles in hot/warm water as per the package instruction. Rinse in cold water and drain them.
  3. Saute the onions and stir-fry vegetables and add the sauce.
  4. Combine the noodles well.
  5. Garnish with roasted sesame seeds.

Variations

Sauce: You can add any type of sauce you love with noodles.
Vegetables: Beans, color peppers, spring onions,.. can be used. Add tofu or edamame beans for protein.

What are Glass noodles?

Glass noodles are thin like thread mostly made of mung bean and/or potato starch which does not contain wheat, flour, or egg. It is also called cellophane noodles, Chinese noodles bean thread noodles. Usually, Chinese noodles are made with mung bean flour whereas Korean is made with sweet potato starch.

How to cook glass noodles?

There is no cooking required. Soak the noodles in hot water for 5-8 minutes. Drain them and rinse in cold water immediately.

What can I add to glass noodles?

Stir-fry vegetables, tofu, and sauce. Do not soak the noodles well before. If you soak it for so long it will absorb more sauce. Stir fry the vegetables and tofu.

What kind of vegetables should I use for noodles?

I used frozen stir-fry vegetables which consists of carrots, red peppers, broccoli, mushroom, and chestnuts. I love those combos. You can add vegetables of your choice. But do not add mushy vegetables.

Is noodles vegan and gluten-free?

Yes they are. I used mung bean vermicelli and tamari sauce. The mung bean are gluten-free and perfect for vegan cooking.

Ingredients
  

Peanut butter sauce

  • 1/4 cup peanut butter
  • 1 tbsp white miso paste optional
  • 1 tsp soy sauce
  • 1/2 tsp sriracha
  • 1/2 tsp hot sauce
  • 1/2 tsp chili flakes
  • 1 tsp agave nectar
  • 1/4 cup warm water
  • salt to taste

For noodles

  • 3 mung bean noodles or any noodles
  • 1 medium onion sliced
  • 2 cups stir-fry vegetables frozen
  • pepper and salt to taste
  • roasted sesame seeds to garnish

Instructions
 

Peanut butter sauce

  • In a bowl combine peanut butter, miso paste, tamari sauce(soy sauce), sriracha, hot sauce, chili flakes, agave nectar, warm water, and salt. Mix well and keep aside.

For stir-fry glass noodles

  • Soak the mung bean noodles in hot water for 5 minutes or as per package instruction. Rinse in cold water and drain immediately.
  • On a heated pan, add olive oil, and onions. Fry onions until they are translucent. Add stir-fry vegetables, pepper, and salt to taste. Cook the veggies until crispy (say 5 minutes).
  • Add the peanut butter sauce, 1/4 cup of more water. Once it starts boiling immeditely add the noodles and stir well.
  • Serve warm by garnishing roasted sesame seeds on top.

Notes

  • You can add almond butter instead of peanut butter.
  • Miso paste is optional.
  • If using fresh vegetables use the combination of carrot, peppers, broccoli, and mushrooms.
