Sprouts salad | Sprouted Mung bean salad is a quick, healthy, and protein(mung bean) salad made with sprouts and vegetables. No oil or dressing for this salad. It is so simple to prepare, it can be done within 10 minutes making sure you have “sprouts” in hand. I have added black salt for regular salt, which makes a huge difference in taste and flavor. Since we are not making any dressing, using black salt will taste your salad different. If you don’t have black salt use regular salt.

Sprouts: Great source of Vitamin K. This vitamin is critical to healthy bone growth, proper blood clotting, and many other bodily functions. 
Cucumbers are low in calories and high in nutrients. It contains antioxidants.

Steps for making sprouts salad

  1. Boil/steam/sauté the mung bean for 2 minutes. Drain water completely.
  2. In a bowl add chopped cucumbers, tomatoes, cilantro, and onion.
  3. Add pepper, black salt, and lemon juice.
  4. Serve immediately.

Bean: You can sprout any bean-like chickpeas, horse gram, lentils,…
Vegetables: Use avocado, lettuce, pomegranate, zucchini,…
Herbs: choose from parsley, dill, rosemary, or basil.

Can I make salad with any other bean?

Yes. You can make sprout any bean and make the salad. If you don’t want to sprout use any boiled bean for a good protein salad.

Are sprouts good for health?

Yes, it is loaded with vitamins and minerals. They are much easy to digest and boost the immune system. If you have a problem digesting legumes or grains you should try sprouts.

Should we cook sprouts?

Yes, you can. Mostly they are taken raw. Raw sprouts may contain harmful bacteria when you don’t do it in the right procedure. Homemade processes are not that harmful, because you know each step involved in making sprouts. I don’t like the raw smell of sprouts. Personally, I like to cook them.

Can I make salad with microgreens?

Yes. Follow the same procedure instead of sprouts add micro greens.

Can I freeze or refrigerate the sprouts salad?

There is always an option of freezing salad. Freezing sprouts will not be a good idea. If buying or preparing sprouts at home refrigerate and use them within 2-3 days. The water content in cucumber, tomato, and onions is not freezer-friendly. For refrigeration, add all the vegetables. Do not add pepper, salt, and lemon juice. Add it while serving.

Can I meal-prep the sprouts salad?

You can prepare sprouts ahead. I don’t recommend cutting all the vegetables and storing for a week is not a good idea.

Ingredients
  

  • 1/2 cup sprouted mung bean
  • 1/2 cup cucumber chopped
  • 1/4 cup tomatoes chopped
  • 1/4 cup sweet onions chopped
  • 2 tsp lemon juice
  • pepper and salt to taste

Instructions
 

  • In a mixing bowl, combine all the vegetables sprouted mung bean, cucumber, tomato, onion, cilantro.
  • While serving add lemon juice, pepper, and salt to taste.

Notes

  • You can add pomegranate, lettuce, and/or avocadoes.
  • For crunchy roasted walnuts or peanuts can be added.
  • No oil is necessary for this type of salad.
  • instead of boiling the sprouts, they can be used as raw, steamed, or saute the mung bean.
