Black bean & Potato cakes (Patties)

Black bean & Potato Cakes is exactly the same as potato cakes made with mashed potatoes with a twist of adding black bean. The potato cakes are often made with leftover mashed potatoes and served with some baked beans. I have made this by combining the bean with mashed potatoes which are very soft inside and crispy on top. To make it crispier I used panko bread crumbs.

A healthy, filling, and protein-packed breakfast to start a day. I have added rice flour to make the patties crispier. You can add plain flour too. The mashed potatoes I have used are plain potatoes with no milk or butter.

Black bean: It has anti-inflammatory, anti-oxidant properties and contains fiber.
Potatoes:  They are rich in iron, phosphorus, calcium, magnesium, and zinc content. It helps to strengthen your bones. 

Variations

Bean The main alternate you can do is with the beans. You can use any kind of bean since mostly all beans go well with potatoes. The canned baked bean is a great choice.
Use plain flour instead of rice flour. Likewise, plain bread crumbs can be used in place of panko crumbs.
Cheese You can avoid or use the combination of cheese or Mexican blend.

How to mash the potatoes?

Use a potato masher or fork to mash the potatoes. Never use the blender. This yields a sticky and elastic texture. I grated my boiled potatoes and then mashed them with a fork to get even mashed potatoes.

Should we use flour slurry?

Not necessary. This is an optional step. This process ensures to have a crispy outer layer. For the slurry, I use arrowroot powder. You can use plain flour or cornstarch to make the slurry.

How to prepare the black bean and potato cake?

This is so simple to prepare. If you are having mashed potatoes with you, then you can be done in a jiffy.
Boil the potatoes and soaked beans together(If using dry beans), Mash them together, and season with garlic powder, salt, and pepper. Throw some cheese and make some patties out of it.
If you want to make it crispier dust with panko bread crumbs.

Why adding beans in Potato cakes?

The main reason is to make healthy. Rather than adding baked beans on top of the potato cakes, we are using beans in the potato mixture.

Can we meal-prep potato cakes?

Yes. This works wonderfully for prep. Refrigerate it for 3 days or freeze for 2 months. If you are using panko crumbs it works perfectly when refrigerated.

How to serve potato cakes?

Top up some sour cream or sauce on the potato bean cake and serve hot. Moreover, you can use it as a patty for a burger.

Ingredients
  

  • 1 cup black bean canned or cooked
  • 2 cups mashed potatoes plain
  • 2 tbsp fried onions
  • 1 tsp garlic powder
  • 1/4 cup rice flour or flour
  • 1/4 cup parmesan cheese
  • salt and pepper to taste
  • 1/4 cup oil

For slurry

  • 3 tbsp arrowrrot powder or cornstarch or flour
  • 1/4 cup water
  • 1/2 cup panko bread crumbs

Instructions
 

  • In a bowl add mashed potatoes. Mash the beans and add to the potaotes.
  • Add fried onions, garlic powder, pepper, and salt. MIx well, Add rice flour or plain flour gradually to form a dough.
  • Divide them equally into 10 portions. Use hands or a cookie cutter to form 1/2 inch thick patties.
  • Refrigerate for 30 minutes (optional). Mix the arrowroot powder and water to form a paste.
  • Heat the oil in a skillet over medium-high heat until almost smoking. . Coat the potato patties in the flour mixture and then into panko crumbs.
  • Add the potato cakes to the pan and reduce the heat to medium-low. Cook until they have formed a golden crust. Turn and cook the other side until golden brown.
  • Serve hot with sauce or sour cream on top.

Notes

To get a golden crust on the sides of the black bean and potato cake add more oil to a pan and fry it.
