Blueberry Scones

Blueberry Scones are no butter, no egg, no heavy cream, and no oil scones. These scones are easy to prepare, mix and bake. I have substituted heavy cream with coconut milk. Make sure you use full-fat coconut milk or coconut cream. If you are using low-fat coconut milk you will not get the soft scones. You can add any fruit of your choice or make it as a plain scone with raspberry chia jam or any fruit preserve on top.

The burst blueberry on baked goodies tastes awesome. Dried berries or lemon zest can be added for different flavors. Shape the scones the way you like round a traditional way or an easy method like pizza, shape into a big circle and cut into 6-8 wedges.

Steps for preparing blueberry scones

  1. In a bowl, combine whole wheat flour, baking powder, ground cinnamon, and salt.
  2. Add the blueberries and combine well.
  3. In a separate bowl, combine coconut milk and maple syrup.
  4. Gradually pour the wet ingredients over dry and mix well.
  5. Bake in a preheated oven for 15 minutes.

Flour: Use all-purpose flour.
Milk: Use coconut cream for rich and creamy scones.
Sweetener: This is a mild sweet scone, add 1/4 cup of sugar for sweetish scones.

Can I use all-purpose flour?

Absolutely yes. You can replace whole wheat flour or white wheat flour too.

My scones dough are too thick and crumbly?

Some whole wheat flour absorbs more liquid. Adjust the dough to a pliable consistency by adding 1 tbsp of coconut milk at a time. Gradually add more to form a dough.

What can I use instead of coconut milk?

Traditionally cream scones are made with heavy cream. Use coconut milk to get a creamy scone.

Will the scones be too dry?

Make sure you bake it right. If overbaked the scones may feel dry.

Can I skip the blueberry?

For simple scones, do not add any fruit. For different flavors add cranberry and lemon zest to the scones.

Should I add oil to the dough?

Not necessary, if you like you can add 2 tbsp of coconut oil while combining the liquid ingredients.

Stay well at room temperature for a day. If refrigerated use within 3 days. They can be stored for up to 3 months in the freezer.

Ingredients
  

  • 2.5 cups wheat flour
  • 2.5 tsp baking powder 1/2
  • 1 cup blueberries
  • 1/2 tsp ground cinnamon
  • 1 cup full fat coconut milk
  • 1/4 cup maple syrup
  • 1 tbsp sugar
  • 1/2 tsp sea salt
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F.
  • In a bowl, combine flour, baking powder, salt, and cinnamon. Mix blueberries into the flour.
  • On another bowl whisk coconut milk, maple syrup, and vanilla extract well.
  • Pour wet to dry ingredients. Flour your work surface and turn the dough over onto it.
  • Knead the dough to bring it together. Press the dough evenly to a round shape about 1 inch thick all around.
  • Use a knife to cut the round into 8 even wedges. Seperate the wedges and place it on the baking tray giving space.
  • Brush the coconut milk on top of the scones and sprinkle some sugar on top and bake until they are cooked or the toothpick comes out clean for 15 minutes.

Notes

  • Some type of wheat flour absorbs more liquid, do adjust the coconut milk to form a dough.
  • Use all-purpose flour instead of wheat flour.
  • Use only full-fat coconut milk.
