Variations:

Milk: Coconut milk or cashew milk can be used.
Sweetener: Maple syrup or agave can be replaced with sugar.
Thickener: You can use cornstarch.
Fruits: Strawberries, pear, peaches can be used. Do not use any citrus fruits that may curdle your custard.

Ingredients
  

For custard

  • 2 tbsp arrowroot powder
  • 1.5+1/4 cup almond milk
  • 1/2 cup sugar
  • 2 drops yellow extract

For fruit custard

  • 1 cup fresh fruits(apple, banana, mango) chopped
  • 1/4 cup nuts of your choice

Instructions
 

To prepare custard

  • In a bowl add arrowroot powder, pour 1/4 cup of almond milk, few drops of yellow color. Mix thoroughly and keep aside.
  • Pour remaining almond milk in a sauce pan and bring to heat on a low-medium flame. Once it comes to boil add sugar, arrowroot mixture. Keep stirring.
  • Once the mixture start thickening add vanilla extract and switch off the flame.
  • Allow to cool in the room temperature and refrigerate it.

To serve

  • Chop the desired fruits and nuts.
  • Remove from the refrigerator and beat well till you get a smooth mixture.
  • Combine all the fruits and nuts.
  • Serve in a bowl or use a waffle cone to add the fruit custard and top with nuts and sprinkle some hemp seeds and serve immediately.

Notes

  • If using sweetened almond milk reduce the sugar.
  • Do not use any citrus fruits.
  • Apple and bananas should be chopped before serving to avoid discoloration.
