Steps for preparing pita bread bowl

  1. Warm the pita in the oven.
  2. Meanwhile, prepare the salad using chickpeas, cucumber, tomato, parsley, green onions, olives, lemon juice, pepper, and salt. Keep aside.
  3. Prepare the herbed tahini sauce.
  4. before serving, place the pita in a bowl, add salad, and top with herbed tahini sauce.

What is a pita bread bowl?

It is the whole like Medetarrian sandwich but in a bowl form. I didn’t use falafel and hummus. Since we are using chickpea salad, I avoided those and used herbed tahini sauce for Medittarian flavor.

What toppings are good on a pita?

You can add vegetables of your choice either by stir-frying or raw vegetables like red cabbage, lettuce, or olives. You can add falafel and different sauces on top.

Can I use nachos instead of pita bread?

Yes, well you can use nachos. If using nachos, this chipotle sauce would be the best option.

Should I warm Pita in the oven?

Not necessarily. You can warm the pita bread in the microwave or stovetop. Make sure you apply oil on both sides and warm.

Can I serve for the crowds?

This is the perfect recipe for the crowd. Keep salad, sauce, and pita separately. When ready to enjoy the food, warm the pita bread and allow the guest to make a choice of what goes in the bowl.

Herbed tahini sauce can be stored for up to a month in the fridge. You can chop the vegetables for the salad and store them separately. It is always a good idea to mix the salad when ready to eat. The lemon and salt make the salad watery. If you like mix all the vegetables and store them in a bowl. Season while you are serving.

Chickpeas salad

  • 1.5 cups chickpeas boiled and drained or canned
  • 3/4 cup diced cucumber
  • 1 tomato chopped
  • 1 tbsp green onions chopped
  • 2 tbsp parsley chopped
  • 1 tsp minced garlic
  • 2 tbsp green olives or olive salad
  • 1 tsp lemon juice
  • salt to taste

Instructions
 

Chickpeas salad

  • In a bowl add chickpeas, cucumber, tomato, green onions, parsley, minced garlic, green olives, lemon juice, and salt. Combine well.
  • Cover the salad and refrigerate it until use.

Warming pita

  • Preheat the oven to 350°F.
  • Slice the pita bread into 8 wedges and arrange them in a baking tray.
  • Put in the oven until the pitas are warm. Make sure you do not overbake it.

To assemble pita bread bowl

  • This should be done before serving.
  • In a bowl, arrange the pita bread, chickpeas salad and top them with herbed tahini sauce

Notes

  • If using dried beans, soak them overnight and pressure cook them for 15 minutes, and drain them.
  • If using canned beans drain the water.
  • Do not throw away the water you can use it for preparing hummus.
  • For a different variation, use falafel bites in the bowl.
