Steps for preparing the rainbow salad

  1. Choose vegetables that are different in color.
  2. Spiralize the vegetables one by one.
  3. To prepare the dressing, mix oil, lime juice, soy sauce, agave nectar, crushed garlic, chopped ginger, and shallots.
  4. I blended all the ingredients using a hand blender.
  5. Arrange the vegetables in order, serve the dressings on the side, and topped with roasted sesame seeds.

Ingredients
  

  • 1/2 English cucumbers spiralized
  • 2 carrots, peeled spiralized
  • 1 small beet, peeled spiralized
  • 1 small yellow squash spiralized
  • 1 tbsp black sesame seeds roasted

For dressing

  • 2 tbsp oil neutral flavored
  • 2 tbsp sesame oil
  • 1 tbsp lemon juice
  • 2 tsp soy sauce
  • 2 tsp agave nectar
  • 1 clove garlic crushed
  • 1 inch ginger grated
  • 1/2 small shallot crushed

Instructions
 

  • whisk all the ingredients together. Use hand blender or food processor to get the emusified.
  • Divide the spiralized vegetables in 4 different bowls and arrage them in any pattern you like.
  • Sprinkle some toasted sesame seeds on top.
  • serve with dressing and lime wedges(optional) on the side.
