Steps for making stuffed mushrooms

  1. Rinse and dry the mushrooms well.
  2. Prepare the stuffing with spring onions, red peppers, the stem of mushrooms, spices, and bread crumbs.
  3. Use a processor if it has big pieces. Make sure you don’t make it as a paste. Add cheese.
  4. Stuff the mushrooms and bake for 15 minutes.

Variations

Vegetables: you can add onions, color peppers, grated carrots, and broccoli.
Cheese: Any combination of cheese or cream cheese. Avoid cheese and add tofu for a vegan version.
Herbs: Include parsley, cilantro, basil for more flavor. Add freshly grated garlic.

Regular white or brown button mushrooms can be used to stuff. I used Organic brown mushrooms.

I used cheddar cheese. You can use a combination of blend cheese or cream cheese.

Make sure you dry well after rinsing mushrooms. If you rinse and cook immediately your mushrooms will turn soggy.

Yes, mushrooms tend to leave water out while baking or cooking. If you do not water leaking inside the oven you can cook mushrooms in the pan and then bake.

How to bake mushrooms?

Arrange mushrooms in a grill rack and place them above a baking tray. Since mushrooms leave the water, the water will be collected in the tray which yields a mess-free oven and crispier mushrooms.

Meal prep for stuffed mushrooms

You can make these stuffed mushrooms up to the point that you would bake them. And freeze them in freezer-safe bags and can be stored for up to 3 months. Bake them directly from frozen, allowing a few extra minutes of baking time. Add fresh panko bread crumbs on top for extra crispiness.

Ingredients
  

  • 24 Mushrooms or more
  • 3 tbsp olive oil
  • 1 tbsp chili flakes
  • 1 tsp garlic powder
  • 1/4 cup spring onions
  • 1/2 cup red bell peppers
  • 1/2 cup panko crumbs
  • 1/4 cup cheese cheddar, parmesan, or cream cheese
  • salt to taste

Instructions
 

  • Preheat the oven for 400°F.
  • Rinse and dry the mushrooms well. Remove the stems from the mushroom. And chop the stems and keep aside.
  • In a bowl mix 2 tbsp of olive oil, add 1 tsp chili flakes, and salt. Using a brush coat the olive oil-chilli mixture inside and outside the mushrooms.

For stuffing

  • In a heated pan, add the remaining oil, spring onions, red peppers, mushrooms stems, chili flakes, garlic powder, and salt and fry on high heat for 5 minutes. Switch it off.
  • Add the panko bread crumbs. Transfer to the processor and add cheese and process chunky. Do not make it as a paste.
  • Fill this stuffing into each mushroom. Place the mushrooms onto a grill rack above a baking sheet. Bake for 15 minutes.

Notes

  • If you have chopped your peppers and mushroom stems finely, you can avoid a food processor. 
  • If using a processor, make sure you don’t make them into a paste.
  • Add any herbs, if you like.
  • Top with more panko for crispier version.
