I adapted this recipe from Skinnytaste book by Gina Homolka. I slightly changed the baking style and toppings, while the original recipe called the toppings to mix in the batter.

Steps for making the baked oatmeal cups

  1. Dry roast the oats. Pulse it grainy. Mix with milk and allow it to sit for 5 minutes.
  2. Meantime, prepare the toppings listed below.
  3. With the soaked oatmeal add apple sauce, baking powder, and salt. Scoop them in the muffin pans.
  4. Add the toppings, and bake for 25 minutes.

Variations

For toppings, you can try a variety of variations. Mix and match the fruits and nuts, you can use any jelly too. Try adding fruit preserve if you don’t have time.

What is Baked oatmeal?

It is cooked with oats, non-dairy milk and gives a texture of bread with flavorful toppings. You can store for a longer time and an easy grab-and-go breakfast.

What are the toppings added ?

The topping options are endless. I have included four add-ons

  • Apple-Cinnamon
  • Banana chocolate
  • Strawberry with chia
  • Blueberry-Pecans

Should you add the toppings to the oatmeal?

Not necessary. The flavored oatmeal brings taste and color to the recipe. If you like it plain, go for it.

Why should I add Apple sauce to the oatmeal?

Applesauce is the replacement for fat. We don’t use oil or butter in this recipe. The pectin in Applesauce makes it replace the oil or butter for the recipe. Automatically, it is low in calories too.

Can I mix my toppings directly into the batter?

Yes you can mix the toppings in the batter directly. If you mix directly the top will look bland. The oatmeal will not rise like muffins.

Should we refrigerate ?

I left it outside for overnight. It is good outside for a day. Keep refrigerated for 3-5 days.

After You have baked the oatmeal with toppings. Let it cool down completely. Once cooled, transfer to a freezer-friendly bag or an airtight container and freeze for 3-5 months.
To serve, refrigerate overnight. Microwave for a minute and serve warm.

Ingredients
  

  • 2 1/2 cups old-fashioned oats or quick oats
  • 1 1/2 cups Almond milk or dairy milk
  • 1/4 cup brown sugar
  • 1/2 cup unsweetened apple sauce
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract

Apple-Cinnamon topping (For 3 muffins)

  • 1 tbsp coconut oil
  • 1 apple peeled, sliced
  • 1/4 cup Brown sugar or 2 tbsp
  • 1/4 tsp ground cinnamon

Banana-Chocolate topping

  • 1 big ripe banana
  • 1/4 cup chcocolate chips
  • 1/4 tbsp roasted walnuts chopped
  • 1/4 tsp vanilla extract

Strawberry-Chia topping

  • 1 cup Strawberries chopped
  • 1.5 tbsp agave nectar or any sweetener
  • 2 tbsp chia seeds
  • 1/4 tsp vanilla extract

Blueberry-Pecan topping

  • 1/2 cup blueberries
  • 1/4 cup pecans chopped
  • 4 dates chopped
  • 1 tbsp brown sugar
  • 1/4 tsp vanilla extract

Instructions
 

Baked Oatmeal

  • Pre-heat the oven to 350°F. Generouslly spray or brush the muffin pa with oil and keep aside.
  • On a heted pan, lightly warm the oats without burning, say 2 minutes. Keep stirring.
  • Once cooled down, add in the food processor and puse it. Make sure you don't powder them.
  • Transfer to the bowl, and add the milk, vanilla extract and allow it to rest for 5 minutes.
  • On another bowl, add brown sugar, baking powder, and salt. Transfer to the oatmeal and add apple sauce and give a stir.
  • Scoop 1/4 cup of oatmeal to the muffin tray. Fill the desired topping on top of the oatmeal mixture.
  • Bake foe 20-25 minutes and allow it to cool 10 minutes.
  • Carefully remove the oatmeal with topping from the pan loosening the edges of the mufffin pan.

Apple- Cinnamon topping

  • On a heated pan, add 1 tbsp of coconut oil and sliced apples. Add sugar and cinnamon powder and saute until apples are soft.

Banana-Chocolate topping

  • Mash the bananas with the help of fork in a bowl and mix choclate chips and vanilla extrct.Add roasted walnuts.

Strawberry-Chia topping

  • In a samll pan, combine strawberries, agave nectar and bring to heat. Cook until thickened. Add chia seeds and vanilla extract.

Blueberry-Pecan topping

  • In a small pan, combine berries, agave nectar and bring to heat. Mash the berries until broken. Cook until thickens add pecans and vanilla extract.

Notes

  • Choose any one topping or change it according to your taste. The time given is for one topping.
  • Roasting the oats enhances the flavors and doesn’t become too mushy.
  • Any type of nut milk can be used. Dairy milk can also be used.
