We get fresh cranberries only during the fall season. This time I tried Cranberry toffee, which turned out good.

For an easy and quick way, run the cranberries in a processor or pulse in a blender. Do not skip the salt. It balances the tart flavor in cranberry. You can reduce the amount of sugar added.

This moist bread will be gone in a few minutes.

Yes, you can use store-bought juices. Reduce the sugar if you are using packed juices. I recommend using fresh orange, for the juice and zest.

What flour should I use?

I have tried spelt flour, whole wheat flour and almond meal, and a combination of these flour. If you are using whole wheat flour, you may need one or more tablespoons of orange juice. Some flours absorb more water and some do not, depending upon the flour reduce or add a tablespoon of juice.
If using all-purpose flour your bread will be light while the wheat and spelt flour yields dense bread. However, with what flour you use, you get moist and soft bread.

Will this recipe work in muffin pans, cake pans?

Yes, you can change the same batter into muffins, square cakes, circle ones, and bundt cakes too. The time varies for different pans and quantities.

Can I add nuts or seeds?

Yes, walnut or pecans can be added. Similarly, use sunflower or pumpkin seeds.

Making the Orange glaze

In a small bowl, whisk 1/2 cup of confectioner’s sugar and 2 tbsp of orange juice together. Add more orange juice depending on how thin/thick you want the glaze. Drizzle over cooled bread

Ingredients
  

  • 1 cup spelt flour
  • 1 cup whole wheat flour
  • 1/2 cup almond meal
  • 3/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 cups fresh cranberries chopped
  • 1 cup orange juice
  • 3 tbsp oil
  • 1 tbsp orange zest
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F. Spray a loaf pan with nonstick spray and line with parchment paper.
  • Whisk the spelt flour, whole wheat flour, almond meal, baking powder, baking soda, sugar, and salt together in a large bowl. Combine orange juice, oil, vanilla extract, and orange zest.
  • Combine well. Avoid over-mixing. Fold in the cranberries.
  • Pour the batter into the prepared loaf pan. Bake the bread for 35-45 minutes or until the toothpick inserted in the center comes out clean.
  • Cool completely. Once cooled, slice and serve.
