Apple stuffed pancakes

Apple stuffed pancakes are regular pancakes with apples in the middle. The crisp of the apples and soft pancakes tastes awesome. If you are kids who are fuzzy in eating fruits you can dip in the pancake batter-coated on both sides and do like a regular pancake. You can use pineapples too. I used almond milk to make it vegan.

For pancake mix, you can refer here or use instant pancake mix. Prepare the pancake mix ahead and have it in the container. When needed, combine the wet ingredients. Make sure you slice the apple a little thicker so that it will not break.

  1. Combine the pancake mix ahead. Add almond milk and prepare the batter.
  2. Keep aside.
  3. Slice the apple in a mandoline slicer.
  4. Heat the iron griddle and brush a few drops of oil.
  5. Dip the apples in pancake batter and make sure it coats well on both sides.
  6. Place it in the hot griddle and cook on both sides.
  7. Serve with maples syrup.

Yes, for a quick version, use pancake mix. Prepare the batter as per the instruction. However, if using buttermilk complete pancake mix, for 1 cup of pancake mix add 3/4 cup of water/milk and flavor with vanilla extract and ground cinnamon.

How to prepare Pancake mix?

I want to choose my flour, so I want to go from scratch. Preparing pancake mix is so quick, as easy as using the pancake mix. For egg-free pancake mix, I always follow this recipe.

  • Whole wheat flour or APF – 1 cup
  • Sugar – 1 tbsp

  • Oil – 1 tbsp

Mix the dry ingredients to store in bulk, and when preparing the pancake add milk and oil.

You can add sugar from 1 tablespoon to 1/4 cup for a cup of flour used. I added 1 tbsp of sugar.

Can I use whole wheat or other flour in this recipe?

Yes, you can any flour you like. Each flour acts differently. The texture, density, the liquid ratio varies. Whole wheat flour gives denser pancakes than oatmeal. All-purpose flour will be exactly like oatmeal.

Should I peel the skin of an apple?

Not necessarily. I didn’t peel the skin of the apple.

It is so easy to prepare, so I suggest keeping the dry ingredients and wet ingredients ready in a separate container. When ready, mix and cook the pancakes. The pancakes stay in the refrigerator well for 2-3 days, I don’t recommend freezing the apple stuffed pancakes.

  • Cut the apple on both the sides and slice the whole apple in mandalian slicer.
  • Heat the iron griddle. Brush oil.
  • Take the apple slice and dip in the pancake batter and place it in the griddle.
  • Cook pancakes, three at a time, until small bubbles form and pop on top
  • Flip, and cook 1 to 2 minutes more until golden on each side. Serve warm with any desired toppings.
