Chia pudding made with carrots and beet will sure be a hit. A satisfying, comfort and delicious chia seed pudding can be served at any meal for your day. These chia seeds are packed with omega, a great superfood for a plant-based diet and vegan. Mostly all chia seeds are often packed with fruits, especially berries, mangoes,… I wanted to give it a try with vegetables. The carrot and beet chia was really so good with custard consistency and bright colors. Give this a shot, you will keep making it.

Chia seeds are filled with calcium, iron, zinc, copper, manganese, niacin, magnesium. All of these are very nutritional. Sometimes they even help control blood pressure.
Carrots have calcium and vitamin K, both of which are important for bone health.
Beet: They are very low in cholesterol and saturated fat and a good source of dietary fiber, folate, potassium, and manganese, Vitamin C, and iron.

Milk: Any nut milk can be used.
Nuts: Pair with any nut that goes well with carrot and beet.

Preparing carrot and beet chia seed pudding

Step 1: Preparing carrot and beet
Firstly, cook carrot by frying for a few seconds in coconut oil and then add milk. Same process for beet.
Step 2: Blending the mixture
Cool the mixture and blend them to a fine paste.
Step 3: Adding Chia seeds
Immediately transfer to chia seeds, and allow it to bloom for 3 hours or overnight in the refrigerator.
Step 4: Serving the pudding
When ready, serve them separately or make layers add nuts of your choice.

Why carrot and beet in chia seed pudding?

I was a little bored of berry pudding, alternatively, I want to try something new rather than regular chia seed puddings. While frying carrot and beet in coconut oil, the flavor is so good.

Should I cook carrot and beet together?

I did it separately to make layers. If you want to try, go for anyone vegetable. You can combine equal measures of carrot and beet to make pudding too, this will have a different color.

Can I add nuts in carrot and beet chia?

Yes, you can blend nuts or garnish them. I added some soaked almonds to the carrot to give a thick, creamy texture. I did not use any nuts for beet. Both were good.

What type of nut milk can I use in chia seed pudding?

You can use any type of nut milk you want. Nut milk and coconut milk will be the best choice. I have never used rice milk for pudding.

To serve

Fill the bottom layer with carrot chia seed pudding, then spoon with beet chia seed pudding. Garnish with some chopped nuts.

To Meal-prep

Pack the carrot and beet chia seed pudding separately in a mason jar. In a separate container or Ziploc bags place 2 tbsp of chopped nuts. When ready to eat, layer with carrot and beet chia seed pudding. and garnish with nuts.

Ingredients
  

Carrot chia seed pudding

  • 1/4 cup grated carrot
  • 5 almonds soaked and peeled (optional)
  • 1 tbsp coconut oil
  • 1 cup almond milk
  • 1.5 tbsp agave nectar
  • 2 tbsp chia seeds
  • 1/4 tsp vanilla extract
  • pistachio to garnish

Beet chia seed pudding

  • 1/4 cup grated beet
  • 1 cup almond milk
  • 1.5 tbsp agave nectar
  • 2 tbsp chia seed
  • 1/4 tsp vanilla extract
  • almonds to garnish

Instructions
 

Carrot chia seed pudding

  • If soaking almonds, soak in hot water for 15 minutes. This step is optional.
  • Meanwhile, on the heated pan add coconut oil and grated carrot and saute for 3-5 minutes.
  • Transfer milk to the carrot and allow it to cook for 5 minutes. Add agave nectar and vanilla extract and switch it off.
  • Once cooled, transfer to the blender jar adding almonds and blend until smooth.
  • Combine chia seeds and carrot mixture and allow it to sit for 3 hours in the refrigerator.
  • Garnish with pistachio.

Beet chia seed pudding

  • On the heated pan add coconut oil and grated carrot and saute for 3-5 minutes.
  • Transfer milk to the beet and allow it to cook for 5 minutes. Add agave nectar and vanilla extract and switch it off.
  • Once cooled, transfer to the blender jar and blend until smooth.
  • Combine chia seeds and beet mixture and allow it to sit for 3 hours in the refrigerator.
  • Garnish with almonds or any nuts of your choice.

Notes

  • If you are doing both chia seed pudding, make layers.
  • Garnish with any nuts.
  • Any nut milk can be used.
