Fruit: Choose a fruit that goes well with milk.
Milk: Any type of milk like almond, cashew, oat milk can be used.
Use more nuts for a crunchy taste.

Chia seed pudding preparation

Step 1 Making the blueberry sauce
Heat blueberry and agave nectar to make a sauce.
Step 2 Blueberry chia seed pudding
In the warm blueberry sauce, add chia seeds, coconut milk and give a stir.
Step 3 Chia seed pudding
In warm coconut milk add agave nectar and chia seeds. Stir and refrigerate both the puddings for 2-3 hours till the chia seeds bloom.
Step 4 Arranging chia seed pudding layers
In a glass jar add blueberry chia seed pudding, layer regular pudding, and top with fresh blueberries and blueberry sauce.

Can I make chia seed pudding with any type of fruit?

Yes, but avoid citrus fruit. The acid in it will curdle the milk. Choose the fruit, that goes well with any milk.

What type of nut milk can I use in chia seed pudding?

You can use any type of nut milk you want. Nut milk and coconut milk will be the best choice. I have never used rice milk for pudding.

Ingredients
  

  • 1 cup blueberries
  • 4 tbsp chia seeds split
  • 1 cup coconut milk splited
  • 2 tbsp agave nectar split

Instructions
 

  • In a saucepan, heat blueberries and a tbsp of agave nectar and keep breaking the blueberries gently. After 2 minutes switch it off.
  • Transfer to a bowl, add 2 tbsp of chia seeds and 1/2 cup of warm coconut milk. Mix well and set aside.
  • On another bowl, add the remaining chia seeds, warm coconut milk, agave nectar and stir well.
  • Refrigerate both the chia seeds for 2-3 hours or overnight.
  • While serving, layer the bottom with blueberry chia seeds and the next layer with regular chia seed pudding. Top with fresh blueberries, syrup, and serve.

Notes

  • If you are refrigerating overnight, you no need to warm the coconut milk.
  • Warming the coconut milk allows the chia seed to bloom quickly.
