I have already posted a plain tofu scramble with turmeric, however, wanted to try with mushrooms and spinach. These bowls are super healthy and yummy.

  1. Press the tofu and scramble it.
  2. Chop onions, green chilies, mushrooms.
  3. In a hot pan, saute green chilies, onions, mushrooms and spinach.
  4. Transfer the scrambled tofu and fry for few minutes. Add turmeric.

Ingredients
  

  • 1 tbsp olive oil
  • 3 gren chilly chopped
  • 1 medium onion chopped
  • 1 cup mushroom chopped
  • 1 cup spinach tightly packed
  • 14 oz firm tofu

Instructions
 

  • Press the tofu using a tofu press or kitchen towel to remove excess moisture.
  • Heat oil in a skillet over a medium heat. Add chopped chilly, onion and cook till they are translucent.
  • Add mushroom and spinach and cook for 5 minutes.
  • Add crumbled tofu, turmeric, and salt and fry until combined. Switch off the flame.
